I absolutely love Indian food. Thankfully, Chiang Mai, offers us many possibilities to sample the excellent fare from that gastronomically positively-endowed subcontinent. And when in need of one of my regular top-ups of dal, samosas, tandoori, and shisha, it's the Arabia Restaurant in the Anusarn market at the Night Bazaar that I head for. On my last trip, I had my staple chana masala, a mixed vegetable curry, some paratha and chapatis, and some hot chai (spiced tea). The chai alone is reason enough to visit this restaurant.

.gifS.M. Farook, the genius behind Arabia Restaurant, has been in Chiang Mai since 1971. In that time, he has run several restaurants and he has been widely recognized as the top local expert in foods from Pakistan, India, Arabia, and Bangladesh. When the ASEAN Games came to Chiang Mai in 1997, he was asked to train all the local hotel chefs in the art of Halal cuisine.

.gifFor the last 15 years, his main restaurant has been the Arabia Restaurant and it is there that he provides for us the fruits of his years of experience. What is more satisfying than a plate of savory tandoori chicken? What is more enjoyable than scooping up steaming curries with a hot chunk of fresh-baked nan bread? What is more comforting than hot chai and sharing a hookah of shisha (Arabian-style long pipe and tobacco) after dinner with close friends?
